The harvest time certainly plays a major role in Céline and Benoit Blet's wines. They always harvest at full ripeness to achieve a balance of fruit and tannins. Therefore, the Anjou Demon has a remarkable structure and velvety tannins. It is a Cabernet Franc with a distinctly southern touch and benefits from aeration.

Méthode Ancestrale is probably the oldest and most original method of producing sparkling wine. In this method, the not yet completely fermented wine is filled into bottles, where it finishes its fermentation. The resulting carbonic acid cannot escape and is finely distributed in the wine. After a long period of aging on lees, the wine is riddled and carefully disgorged. Typically, méthode ancestrale wines are simple and fruity beverages that, while enjoyable, do not meet high standards in terms of the quality of the carbonation bubbles or sophistication. Here, it is completely different. Ancestral has a fine mousse, a mineral and complex taste, and delicate yeasty notes. Simply superb!
