In Oiron, the Cabernet Francs are more robust than in other parts of the Loire due to the clayey soils and slightly warmer microclimate. The harvest time certainly plays a major role in the wines of Céline and Benoit Blet. They always harvest at full ripeness to achieve a balance of fruit and tannins. This is why Anjou Demon has a remarkable structure and velvety tannins. It is a Cabernet Franc with a decidedly southern touch and benefits from aeration.
